    1. Pre-heat oven to 450 degrees.
    2. Remove any bruised or dirty outer leaves of the cabbage.
    3. Halve the cabbage then slice each half into quarters.
    4. Place wedges on a rimmed baking sheet, brush with olive oil and season with salt and pepper on both sides.
    5. Roast for 25-30 minutes, flipping halfway through cooking time, until edges are crisp and a bit brown.
    6. Sprinkle with lemon juice and serve hot.
