    Instructions
    1. Use a large skillet over medium heat. Add 1 tsp. olive oil. Add the riced cauliflower and stir. Rice should be al dente. Remove from heat and let cool.
    2. Dice cucumber, tomatoes, green onion and fresh parsley or cilantro. Add to cooled cauliflower.
    3. Season turkey tenderloins with salt and pepper and grill until done. Cut into bit size pieces and add to cauliflower mixture.
    4. Wisk dressing ingredients in a small bowl and pour over cauliflower. Stir to combine flavors, serve immediately.
