Oven Roasted Escarole
Oven Roasted Escarole (great for all phases)
- 1 large head of escarole, cut into quarters (or 3 heads of radicchio, cut in half lengthwise)
- cooking spray
- garlic powder to taste,
- Kosher salt
- Freshly ground pepper
- Walden Farms Balsamic Vinaigrette
Preheat oven to 4oo degrees, and spray a large glass baking dish with cooking spray.
Mist the escarole with cooking spray and season.
Spread the escarole in a thin layer and bake for 15 minutes then flip the escarole and continue cooking (8- 10 ) until tender.
Serve with a drizzle of Walden Farms balsamic dressing.
