Baked Cod with Lemon and Olive Oil

Baked Cod with Lemon and Olive Oil (Great for all phases)


•4 cod fillets (6 ounces each), each 1″ thick
•1 1/2 tablespoons lemon juice
•1 tablespoon olive oil
•2 garlic cloves, minced
•1/2 teaspoon dried thyme
•pinch of salt
•1/8 teaspoon ground black pepper
•1/4 teaspoon sweet Hungarian paprika (optional)

Bake with 2 tablespoons chopped roasted red peppers or serve sprinkled with 1 tablespoon chopped fresh basil.

1.Preheat the oven to 400°F.
2.Arrange the fillets in a 13″ 3 9″ baking dish. Drizzle with the lemon juice and oil, and sprinkle with the garlic, thyme, salt, and pepper. Sprinkle with the paprika (if using), and lightly rub it in. Bake until the flesh is completely opaque but still juicy, 15 to 20 minutes. Serve with the pan juices spooned over the top.
